Creamy Italian Sausage Soup – Quick Recipe Ideas
Rather than another broth based soup, I felt like trying a cream base. I have only ever made a cream base soup in my old foods class so this was a good refresher.
I started by dicing the onions, carrots, celery, and minced the garlic.

Then in the pot, I added oil, onions, and garlic until translucent and fragrant.

Then the sausage went in until brown.

Once the sausage was done I added the carrots and celery.

At this point I noticed the recipe was going a little fast and did not contain any seasonings. Once I noticed that I let the vegetables cook down for a bit to get soft, but kept moving the meat so it wouldn’t burn. I also added basic seasonings like oregano, basil, and cayenne before any liquids.
After letting everything cook down I added vegetable broth and heavy cream until it boiled then I reduced the heat.

Add the spinach last so it wilts without losing flavour.

This recipe needed some alterations in my eye, but the end result did taste good. I learned from the last soup to let the flavours mature in the pot before going onto the next step. I think in the future I’d make this soup, but without the recipe.
