Hearty Chicken Veggie Soup – Good Taste Recipes
This soup was so tasty and relatively easy to make!
I started by preparing all my veggies. Dicing the onions, chopping the celery and carrot, mincing the garlic, and cubing the potatoes.

In a pot on medium heat, I put oil and the onions, celery, and carrots to soften before putting in the garlic. I then put the garlic in after that point so it wouldn’t burn and the spices so they would get time to warm up before the broth (no picture).

After the vegetables were soft and the garlic was fragrant, I added the broth. Instead of chicken broth I opted for vegetable broth. Then I added the cubed potatoes and two whole chicken breasts. Bringing that to a boil then simmering for about 20 mins. After that I checked if the potatoes were fork tender, and the chicken reached 165°F.

The chicken reached the right temp, then I removed them so I could shred them.

Then back in the pot they went!

Since making this soup I have learned that I need to learn how to make smaller batches or find more people who like soup. I would definitely try this recipe again, and I don’t think I’d change too much.
